Lemon poppy seed bread is a lemon based cake like bread. It is sweet, sour, and nutty without having nuts in it. The nutty flavor in lemon poppy seed cake actually comes from the poppy seeds.
Ingredients
1 ¾ Cups/235g All-Purpose Flour
¾/150g Cup Sugar
1 Teaspoon Baking Powder
2 Tablespoons Poppy Seeds
Zest of 2 Lemons
2 Tablespoons Fresh Lemon Juice
¾ Cup/177ml Milk
3 Large Eggs
¾ Cup/185g Butter (Room Temperature)
Instructions
Step 1. Preheat oven to 350°F/176°C
Step 2. Add all of the dry ingredients into a stand mixer and mix until well combined.
Step 3. Add all of the wet ingredients to the dry ingredients and mix until well combined.
Step 4. Line a 9x5in/23x13cm loaf pan with bread loaf liner and pour the lemon poppy seed batter into the liner.
Step 5. Place in preheated oven at 350°F/176°C for 50 minutes or until loaf is golden brown and fully bake.
Step 6. Remove from oven and let cool for 10 minutes.
Tips:
- You can tell if they lemon poppy seed loaf is fully baked the same way you check to see if a cake it fully baked, by inserting a toothpick in the center of the loaf. If it comes out clean the cake is done if it does not add 5 minutes until the loaf is done.
