Our kids heard about Taco Tuesday a couple of weeks ago and got to asking what people do on taco Tuesday, “do they have the same tacos everyday?” “Do they go to different taco restaurants?” “Do they also have pizza Friday’s and do they have to have tacos every Tuesday even if they don’t want to?” After a long conversation on the topic of Taco Tuesday’s they asked me to come up with a fun and different kind of taco dish. Which is how I came up with this dish. Cute little bite size mini taco salads that are actually prefect for serving at parties.
Ingredients
Taco Meat
1 Pound Ground Beef
½ Cup Tomato Sauce
¼ Cup Water
1 Teaspoon Cumin
½ Teaspoon Garlic Powder
½ Teaspoon Onion Powder
½ Teaspoon Onion Powder
⅛ Teaspoon Oregano
1 Teaspoon Salt
⅛ Teaspoon Pepper
Topping
4 Cherry Tomatoes sliced into small wedges
⅓ Iceberg Lettuce Dice as small as possible
3 Slices Queso Tetilla Cheese (Cubed)or substitute with Shredded Mozzarella
4 Tablespoons Greek Yogurt or Sour Cream
2 Tablespoons Guacamole

1 Bag Mini Tortilla Bowls
Step 1
In a skillet cook beef until completely done and crumbled. Add in the tomatoes sauce, spices, and water and cook for 5 minutes or sauce is completely absorbed by the meat.
Step 2
Take a mini tortilla bowl and fill it half way with taco meat. Top with a small amount of guacamole, followed by lettuce, a small slice of tomato, a drop of Greek yogurt and put the cheese on top of the yogurt to hold it in place. Repeat with the rest of the tortilla bowls and serve.
