Lightly Seasoned Carrot Salad Recipe

Today we are celebrating the flavor or the carrot. This is a lightly seasoned carrot salad that is meant to not completely drown out the flavor of the carrots. Let’s face it we all work really hard all season long to grow carrots and it is wonderful when we get to sample our first carrot harvest. This is a dish just for that so taste the fruits (or well vegetables) of our labor.

Ingredients

3 Large Carrots (Grated)
½ Tablespoon Dill
½ Tablespoon Parsley
¼ Teaspoon Salt (and salt to taste)
2 Turns (1/8 Teaspoon) Fresh Cracked Pepper (Optional)
1 Tablespoons Lemon Juice
1 Tablespoon Apple Cider Vinegar
2 Tablespoons Vegetable Oil
1 ½ Teaspoons Honey
1 Teaspoon English Mustard
2 Tablespoons Feta Cheese

Instructions

Step 1
Grate 3 large carrots into a large bowl using a cheese grater to get them thinly grate and set to the side.

Step 2
In a small/medium size bowl whisk together the remaining ingredients excluding the feta cheese.

Step 3
Pour dressing on top of grated carrots and toss until well combined.

Step 4
Sprinkle feta cheese on top. Serve immediately or for extra flavor leave in the refrigerator for 2 to 4 hours before serving.

Tip: You can also leave it over night before serving. The longer you leave it in the refrigerator the more the flavors of the seasonings will come out.

    Great timing on this recipe as we have about 10lbs of carrots in the fridge and more in the garden.
    Just wanted to send a quick note about the recipe; the ingredients list calls for 3 carrots, but then in the recipe description it mentions two. Which is the correct amount?
