The summer is starting to heat up and with the heat comes our lack of appetite for hardy and warm dishes. Our daily menu shifts from warm and comforting to cool and refreshing. An amazing salad to have on a hot and sunny day is mango and black bean salad. It is served cold and is tangy, sweet, and savory all mixed into one.
- 2 Cups Mango, Diced
- 1 ½ Cups Black Beans, Drained and cooled (or 1, 15 ounce can drained and rinsed)
- 6 Springs Chives, Chopped
- 1/4 Cup Cilantro Leaves Chopped
- 1/4 Cup Lime Juice
- 1 Tablespoon Olive Oil
- Salt to taste
Boil beans for 1 hour or until tender. Once tender rinse with cold water. If using canned beans drain and rinse with cool water.
In a large bowl add all ingredients and mix until well combined.
Place in the refrigerator for 15 to 20 minutes or untiled chilled. Best served cold.
