A lot of restaurants in America serve different versions of red, white, and blue pancakes for their holiday breakfast specials during July for the 4 of July celebration. Normally they serve buttermilk pancakes or plain pancakes with fresh fruits and whipped cream. I have even seen places serve pancakes with red white and blue sprinkles. Well this recipe is different. It doesn’t use butter milk or sprinkles it uses fresh sweet cream. The fruit are all cooked into a wonderful simple syrups, and the whipped cream is homemade. Let’s get started.
Pancake Ingredients
- 3 Cups All Purpose Flour
- 3 Teaspoons Baking Powder
- 1 Teaspoon Baking Soda
- 1/2 Teaspoon Salt
- 2 Large Eggs
- 2 Cup Heavy Cream
- 1 Cup Whole Milk
- 1/2 Cup Sugar
- 1 Tablespoon Vanilla Extract
Strawberries In Simple Syrup Recipe
- 1 Cup Water
- 1 Cup Granulated Sugar
- 2 Cups Quartered Strawberries
Blueberries In Simple Syrup Recipe
- 1 Cup Water
- 1 Cup Granulated Sugar
- 2 Cups Blueberries
Whipped Cream
1 Cup Whipping Cream
1 Tablespoon Granulated Sugar
1/2 Teaspoon Vanilla Extract
Directions
Step 1. Whipped Cream
Add all ingredients into a stand mixer and whipped at medium speed until light fluffy stiff peeks form. Place in piping bag with large star tip and place in refrigerator to kept cool until pancakes are ready
Step 2. Simple Syrups
Strawberry Syrup
Place cut strawberries, water, and sugar in sauce pan and cook at medium heat for 10 minutes or until syrup is thick like maple syrup. Set aside to cool before placing in serving container. Serve warm.
Blueberry Syrup
Place Blueberries, water, and sugar in sauce pan and cook at medium heat for 10 minutes or until syrup is thick like maple syrup. Set aside to cool before placing in serving container. Sever warm.
Step 3. Sweet Cream Pancakes
1. Place all dry ingredients in stand mixer and mix until well combined.
2. Add wet ingredients to dry ingredients and mix until a smooth batter is formed.
3. In a large nonstick pan set to medium heat add a scoop of pancake batter. Once bubbles form and start to pop open at the top of the pancake flip is over and cook it on the other side until fluffy, spongy, and fully cooked.
Assembly
Place a serving of pancakes on a plate and stop with warm strawberry and blueberry simple syrups. Pipe on fresh whipped cream and enjoy.
We also like to top with a little butter and some fresh strawberries and blueberries for some extra special fun.
