Youtiao Chinese Donut Recipe

Youtiao is a savory breakfast donut that is originally from Guangdong, China. Youtiao is normally served for breakfast with congee which is rice porridge/soup. Todays recipe is only for the Youtiao which is also good alone or with your favorite soup.

 

Ingredients

 

2 Cups All-Purpose Flour

1 ½ Teaspoons Baking Powder

2 Tablespoons Salted Butter (room temperature)

⅓ Cup Water

1 Large Egg (room temperature)

1 Tablespoon Whole Milk

Your favorite oil for deep frying

 

Instructions

 

Step 1 – Mix all dry ingredients together in a stand mixer or large bowl.

 

Step 2 – Add in all wet ingredients into the dry ingredients and mix until well combined.

 

Step 3 – Once everything is well combined knead dough in mixer with dough hook for 10 minutes.

 

Step 4 – Once the dough is done kneading roll it into a ball and place it back in the bowl and cover it with a damp cloth or plastic wrap and let it raise for 30 minutes.

 

Step 5 – Remove dough from bowl and lightly rub oil all over the dough. Wrap the oiled dough with plastic wrap and place it into the refrigerator for 8 hours.

 

Step 6 – After 8 hour removed the dough from the refrigerator and let it rest on the counter top at room temperature for 1 to 2 hours.

 

Step 7 – Once the dough has reset for 1 to 2 hour remove it from the plastic wrap and roll it out into a flat square that is 1/4in-1/2cm think. Then cut the dough into 1in-2cm wide strips. You should have 20 strips.

 

Step 8 – Place 1 strip on top of another strip and press them together using a chopstick. Repeat this step until you have 10 strips stacks of 2 strips pressed together each.

 

Step 9 – Fill and medium to small sauce an 2/3 of the way with oil (about 2in/5cm from the top). Heat the oil to 375°F/190°C

 

Step 10 – Once the oil is the right temperature fry each dough strip for 5-7 minutes or until golden brown making sure to fry them on each side for a even color and texture. Serve warm or room temperature and enjoy.
