We don’t like to use dye or color additives in our cooking/baking and try to avoid it as much as possible. I made this recipe using purple cauliflower from the garden. Not only does the cauliflower give the bread a nice light purple color, it also adds amazing flavor and vitamins to the bread.
Ingredients
3 Cups All-Propose Flour
1 ½ Teaspoons Salt
1 ¼ Cups Purple Cauliflower Water
3/4 Cup Active Sourdough Starter
1 Tablespoon Honey
Instructions
Step 1 Boil Purple Cauliflower and strain liquids away from cauliflower florets. This is the water you will use to give the bread it’s purple color and distinct flavor.
Step 2 Mix all dry ingredients in a stand mixer and mix until well combined.
Step 3 Add in all the wet ingredients into the dry ingredients and mix with a dough hook attachment until well combined. Let the mixture rest for 15 minutes.
Step 4 Knead dough for 5 minutes using the mixer or 8 to 10 minutes if you are kneading by hand.
Step 5 Remove dough from the mixing bowl and turn and fold it into a ball with lightly floured hands and cover bowl with a warm moist towel let rise for 3 hours.
Step 6 After 3 hours turn and fold again, and let rise seam-side up in a bowl for another 2 hours.
Step 7 After the second rise, heavily flour a round bread pan and gently shape the dough into a ball. Heavily flour the top of the dough and let it rest for 40 minutes
Step 8 Before the 40 minutes is up preheat the oven to 450°F/232°C degrees. You want to heat to where it will be done heating in time to put your dough in when the 40 minutes is up.
Step 9 Once the timer goes off and the oven is ready make a slash at the top of the loaf with a razor blade or lame slashing tool make one to two deep slashes in the loaf and several small slashes in the design of your choice or three deep slashes if you don’t want to make a design. (The slashes help the dough to rise when the crust gets hard in the oven for the dough to rise.
Step 10 Replace a large bowel over the top of the bread and bake for 12-15 minutes.
Step 11 After 12-15 remove the lid and continue baking for another 13-15 minutes, or until golden brown.
Step 12 Let bread cool at 30 minutes before cutting.
