Plum Chicken Stir Fry Recipe

When you celebrate the Seanad fruits of summer something wonderful happens. Plums and in season and something wonderful happens when fruit meets vegetables and meat. You end up with an incredible celebration of sweet, sour, and savoury. In this dish you have everything you need to end the day full and happy. If you’re growing your own plums you also have another way to use all those plums your tree is producing at an incredible rate right now.

Ingredients

3 Tablespoons Sesame Oil
3 Chicken Breast Diced
2 Plums Pitted And Chopped
½ Medium Red Onion
1 130g Package Baby Corn Chopped In Half
1 220g Package Fresh Green Beans Chopped Into 2 Inch Pieces
1 Large Garlic Clove minced
½ Teaspoon Salt
½ Teaspoon Garlic Power
½ Teaspoon Onion Power
½ Teaspoon Ginger Paste
1 Tablespoon Soy Sauce
1 Tablespoon Honey
3 Tablespoons of water

Instructions

Step 1
In a wok or large skillet add the sesame onions, minced garlic cloves, and diced red onions. Fry until onions are tinder but not mushy.

Step 2
Add in chicken, garlic power, and onion powder and cook until chicken is cooked complete through.

Step 3
Once the chicken is fully cooked add in the fruit, vegetables, and the rest of the ingredients and stir until throughly combined.

Step 4
Stir in 3 tablespoons of water and stir until it is well combine. Stir frequently until vegetables are soft and crunchy.
