Lime and Cilantro Chicken Recipe

We just got a fresh batch of limes and they smelled so delicious that it reminded us of lime chicken. So we had to whip up a batch for old time sake and it came out amazingly. Some of us can not eat hot foods so we had to take out the chili and cumin. To our surprise it was still incredible. For this recipe those ingredients are strictly optional because it is so delicious with or without them.

Ingredients

  • 3 Tablespoons Olive Oil
  • ¼ Cup Lime Juice
  • ¼ Cup Chopped Cilantro
  • 2 Garlic Cloves Minced
  • 2 Tablespoons Brown Sugar
  • 8 Chicken Legs
  • 1 Teaspoon Red Chili Flakes (Optional)
  • ¾ Teaspoon Ground Cumin (Optional)
  • Salt and Pepper to taste
  • Lime wedges for serving

 

Instructions

Step 1

Preheat oven to 425°F (220°C)

Step 2

In a large bowl whisk together olive oil, lime juice, cilantro, garlic, brown sugar, and salt and pepper (and optional ingredients if you are using them).

Step 3

Add chicken to the bowl of sauce and toss until fully coated with sauce.

Step 4

Transfer spiced chicken legs to oven safe baking dish and cook at 425°F (220°C) for 45 minutes or until fully cooked.

Step 5

Remove from oven and let rest for 10 minutes. Serve with lime wedges.
