Spinach And Ricotta Stuffed Focaccia Bread Recipe

Some days we all just need a nice healthy meal on the go, or to snack and run. These little stuff focaccia breads are prefect for on the go lunches and snacks. They can also be frozen and heated in the microwave, grill, or even in a toaster bag and will still be soft and delicious.

Ingredients

Focaccia Dough

  • 2 3/4 Cups All-Purpose Flour
  • 1 Teaspoon Salt
  • 1 Teaspoon White Sugar
  • 1 Tablespoon Active Dry Yeast
  • 1 Teaspoon Garlic Powder
  • 1 Tablespoon Vegetable Oil
  • 1 Cup Warm Water
  • Extra olive oil for rubbing on hand and on top of bread

Stuffing

  • 1 Cup Spinach Diced
  • 1/2 Cups Ricotta Cheese
  • 1/4 Cup Parmesan Cheese Flakes
  • 1/2 Teaspoon Garlic
  • 1/2 Teaspoon Onion Powder
  • 1/4 Teaspoon Salt

Instructions

Step 1

In a stand mixer add in all dry ingredients for the dough and mix until well combine.

Step 2

Mix in all wet ingredients from the dough recipe into the dry ingredients and mix until well combine

Step 3

kneed dough in stand mixer with dough hook attachment for five minutes

Step 4

Remove hook and cover dough with warm moist cloth or plastic wrap and let raise for 20 minutes.

Step 5

Preheat oven to 450°F

Step 6

While dough is rising dice 1 cup of spinach and mix in all of the stuffing ingredients.

Step 7

Once dough is finished raising oil hands and remove from bowl and flatten on to parchment line baking dish.

Step 8

Spread  spinach stuffing on half of the dough leaving 1 or ½ inch of space around the rime with no stuffing to leave a seam to seal it closed.

Step 9

Fold dough in half making sure to fully cover stuffing and lightly press down on the seams to make sure the stuff wont run out.

Step 10

Brush olive oil on top of dough and sprinkle with salt, garlic, parmesan, and mozzarella to taste.  

Step 11

Place in 450°F preheated oven and bake for 15 minutes, cut into squares and enjoy.
