Rainbow Sugar Cookie Recipe

Spring and the holiday of Saint Patrick’s is almost here and we can’t wait! Holi is also the day before Saint Patrick’s day is the very beautiful festival of colors celebrated in India and now worldwide. It’s is also the festival of spring and is right before the first day of spring. Reminding us all of the beautiful colors to come as we paint our friends, the streets, and our gardens with wonderful colors. We really love a variety of colors here at Our Little Chateau. Each person has their own favorite color which we use to color code their personal items in the house, and as if that wasn’t enough we also simply just love colors. Mind you we are also lovers are art and drawing and painting are some of our hobbies. Holi offers a change to dabble in the fine arts as well with painting and sand art and anything involving colors. So I decided to give everyone a little colorful surprise this Holi and make rainbow sugar cookies. It’s fairly easy make and fun as well and I wonderful way to welcome spring and it’s many rainbows.

Ingredients

  • 2 ¼ Cups All-purpose Flour
  • ½ Teaspoon Baking Powder
  • ¾ Cup Salted Butter (Room Temperature)
  • ¾ Cup Granulated Sugar
  • 1 Large Egg
  • 2 Teaspoons Vanilla Extract
  • ½ Teaspoon Almond Extract or 10 Drops Orange oil

Instructions

Step 1. In a large stand mixer add dry ingredients and mixed until well combined.

Step 2. Add in all wet ingredients and mix until well combined. Once a soft dough has formed turn off mixer.

Step 3. Separate dough into 6 sections.

Step 4. Color each section a different color. The colors of the rainbow are red, orange, yellow, green, blue, and purple/ violet.

Step 5. Roll out each color except purple into a square shape about 1/4 of an inch thick. Make each one a little bigger than the last. Roll purple into a round cylinder shape.

Step 6. Place purple on the edge of the blue square and gently roll them into a cylinder. Then place the blue on the edge of the green and roll them into a cylinder. Do the same for all of the colored squares.

Step 7. Once all of the colors have been rolled, rolled them into a sheet of parchment paper and place them in the refrigerator until fully chilled.

Step 8. Preheat oven 350°F 117°C

Step 9. Take cookie roll out of the refrigerator and slice into 1/2 inch slices.

Step 10. Places sliced on parchment lined baking sheet or silicon baking mat and bake in the oven 10 to 15 minutes or until fully baked. Consume with 1 week or freeze to kept longer and thaw in the refrigerator to prevent making them soggy and remove abs enjoy cold or sit out to get room temperature before eating.
