Meringue cookies are a quick and easy treat to make when you don’t have a lot of time. I know people say they are hard but they aren’t really. If you use a mixer and room temperature ingredients you can whip up a batch or two really fast. I remember a few years back my eldest daughter remember her school was having a bake sale and she volunteered for me to make something. The problem was she forgot to tell me until the night before of the bake sale. Three hours later I had three dozen red and green Christmas colored peppermint meringue cookies packed and ready to go.
Ingredients
4 Egg Whites room temperature
1 Cup Sugar
1/4 tsp Cream Of Tartar
1/8 tsp Salt
1/8 Teaspoon Peppermint Oil
Red and Green Food Coloring
Instructions
Step 1. Preheat oven to 225F° or 105C°.
Step 2. Whisk egg whites, cream of tartar, and salt in a mixer slowly increasing to high speed.
Step 3. Slowly add in sugar until mixer is smoothed with stiff peaks.
Step 4. Gently fold in peppermint oil until well combine.
Step 5. To make strips make small lines of food coloring on the inside of a piping bag, then fill it with the batter.
Step 6. Pipe meringue cookies to desired shape .
Step 7. Bake at 225F for 1 hour. When cookies are done turn off the oven and let them cool inside the oven for 2 hours before removing. Store cookies in airtight container so the wont weep.
