Blueberry Waffles Recipe

Sunday brunch as become a big deal at our little chateau. Because of the pandemic everyone is working at home and going to school online. This means less time to eat as a family because everyone has different meeting times. We always did Sunday brunch and loved it but now that it is one of very few times we get to sit and eat as a family it has now become a big affair. No matter what is going on, everyone comes and gathers at the table. We have decided that we will make this a new tradition and plan to meet every Sunday for brunch even when the kids get older and have families of their own. One of the most loved dishes for Sunday brunch is blueberry waffles. Which ended up being a mix of family recipes. Crisp but soft waffles with blueberries, covered in butter (syrup or honey is optional).

Ingredient:

2 cups Flour

1/4 Cup Sugar

4 tsp Baking Soda

1/2 tsp Salt

2 Eggs

1/2 Cup Olive Oil

2 Cups Milk

1 tsp Vanilla Extract

1/2 Cup Blueberries

Instructions:

Step:1 Add all dry ingredients into a bowl and mix well.

Step 2: Add all wet ingredients to the dry ingredients and mix/whisk until a smooth batter is formed with no clumps.

Step 3: Gently fold in blueberries being careful not to break them open (your waffle marker will thank you).

Step 4: Pour the correct amount of batter for your waffle marker into the waffle maker and enjoy.

Tip: When measuring batter for different size waffle makers I like to use a ladle. Most waffle makers will use a whole ladle of batter and others will use half a ladle.
