Baked Potato Casserole Recipe

I decided to have a little fun in the kitchen this week and take our favourite foods and add a new twist to them. This one came out so good I had to write it down. Basically it takes everything we love about baked potatoes and packs it all into bite size fun. This dish would also be amazing as a holiday side dish, sports party appetizer, potluck dish, or any time you need something delicious and easy to make for an event.

Recipe

1 small bag new potatoes

5 strips of smoked rashers or smoked back bacon

1 small head of broccoli

1 bag small bag shredded mozzarella cheese

1 medium tube Greek yogurt or sour cream

2 chives chopped

Butter for curling on top of potatoes

Step 1 Cut potatoes in half and place in casserole dish cut side up. Curl butter on top and place covered in oven on 350°F for one hour or until potatoes and soft.

Step 2 While potatoes are cook bacon to crispy and chop bacon, broccoli, and chives.

Step 3 Mix half a bag shredded mozzarella with the bacon and broccoli and set to side.

Step 4 Once the potatoes are soft take them out of oven and remove the lid. Add the broccoli cheese bacon mix on top of the potatoes and sprinkle the rest of the cheese on top. Place on top rack of oven or in the broiler to cook until cheese is golden brown.

Step 5 Remove from oven and garnish with a dollop of yogurt (or sour cream) and a dash of chives, and enjoy.
