Sweet potatoes are root vegetables and are a lot like potatoes except they are naturally sweet. They can baked, boiled, steamed, fried, grill and the list goes on. They are also very easy to grow and high in vitamin A and calcium as well as other vitamins. Today’s recipe is on how to make scalloped sweet potatoes. This dish is reminiscent of sweet potatoes casserole, sweet and spiced with cinnamon.
Ingredients
2 Large Sweet Potatoes
¼ Cup Salted Butter
¼ Cup Brown Sugar
2 Tablespoons Granulated Sugar
⅛ Teaspoon Cinnamon
Step 1 – Preheat oven to 375°F/190°C

Step 2 – Wash and slice sweet potatoes into ½ thick slices.
Step 3 – In a 9in/22cm pie pan or tart pan stack sweet potatoes in a circular pattern starting for the center of the pan and work your way to the rim of the pan.
Step 4 – Sprinkle the brown sugar, sugar, and cinnamon on top of the sweet potato slices.
Step 5 – Next slice or cube the butter and place it on top of the sweet potato slices.
Step 6 – Cover with a thin foil and bake for 25 minutes at 375°F/190°C or until the sweet potato slices are soft.
