Swiss Chard is a leafy vegetable with a colorful and edible stalk. It originates from Sicily, Italy and is used in a variety of dishes. Todays recipe is for pork sautéed swiss chard. This dish makes an incredible side dish to any meal and can even be a main dish on its own. It is full of rich flavor and vibrant color.
Ingredients
4 Stalks Red Swiss Chard Chopped
2 Bone-in Fatty Pork Chops
1 cup Water
1 Teaspoon Olive Oil
2 Tablespoons Olive Oil
1 Tablespoon Onion Powder
½ Teaspoons Garlic Powder
¼ Teaspoon Celery Salt
Salt and Pepper to taste
Instructions
Step 1 – Season pork chops with the onion powder, garlic powder, celery salt, salt, and pepper and rub in the seasoning using 1 teaspoon olive oil.
Step 2 – Heat a medium skillet to medium high heat and add in 2 tablespoons of olive oil. Quickly sauté pork chops until golden brown. Once they are done cooking removed them from the pan and quickly add in ¼ of the cup of water to the pan and use a spoon or spatula to loosen up the meat drippings on the bottom of the pan.
Step 3 – Turn the heat in the skillet down to medium and add in the chopped swiss chard. Toss the swiss chard in the meat sauce and add in ½ cup of water and stir it in until it is well combine with the sauce. Cover the pan with a lid and let it swimmer until the swiss chard is tender when poked with a fork.
Step 4 – Uncover the swiss chard and stir at various stages, check to see if it needs more water and add water if needed. Once the swiss chard is tender check to see if the dish needs more of the spices and add them before reducing the liquid.
Step 5 – Once the swiss chard is tender remove the lid and cook until the liquid has completely evaporated and serve.
Note – If you are making this as a main dish it is best not to reduce the liquid until you are trying to add more flavor. As a main dish you can dice the pork chops and add them into the dish before serving it.
