Black tomatoes have a lovely aroma that has just a hint of pumps and a savory flavor that is slightly smoky. We love Justin them to make tomato guacamole when we are bar b queuing to enhance and bring balance to are dishes.
2 Black Plum Tomatoes Diced
½ Small Onion Diced
½ Lime Juiced
¼ Cup Fresh Cilantro Chopped
¼ Teaspoon Smoked Paprika
½ Teaspoon Onion Powder
½ Teaspoon Salt
¼ Teaspoon Fresh Cracked Black Pepper (Optional)
In a small bowl add Onions, lime juice, cilantro, and spices and set to the side to cook in the lime juice.
Dice the black tomatoes into medium small pieces and add to the small bowl of onion, lime juice, and spices.
Cut the Avocado in half and remove the pit. Scoop avocado into a a separate bowl and mash until it is the consistency of mashed potatoes.
Add avocado to the small bowl with the rest of the ingredients and mix until well combined. Serve immediately.
