Homemade Sushi Ginger Recipe

The more we get settled into our new home the more it seems life slowly goes back to normal for us. One thing that we have started to be able to do again is make our own sushi. It wasn’t easy finding all of the ingredients and sadly one thing we couldn’t find was sushi ginger. Thankfully we had a recipe handy. If you want to make your own sushi ginger because you can’t find any or you want to avoid additives from the store this is a really easy recipe to use. The ginger can be eaten the next day or if you’re in a hurry in a few hours.

Ingredients

  • 1/2 pound Fresh Ginger
  • 1 Cup Rice Vinegar
  • 1 Teaspoon Sea Salt
  • 1/3 Cup White Sugar
  • 1/2 Cup Water

Directions

Step 1

Wash and slice ginger as thin as you can. A vegetable peeler or mandoline works best.

Step 2

Pour water and and salt into sauce pan and bring to a boil. Once the liquid is boiling add in ginger and boil for 3 minutes.

Step 3

After 3 minutes turn off heat and drain water away from ginger. Place ginger in clean heated mason jar. Note: Heat mason to prevent it from cracking and braking when you pour hot liquid into it later.

Step 4

In a sauce pan bring rice vinegar and sugar to a boil. Once sugar is fully devolved turn off heat and pour liquid into the mason jar with the ginger.

Step 5

Let sit with the lid off until cool. Once cooled place the lid on the jar and place in the refrigerator overnight. Sushi ginger should be used within one to two and kept refrigerated. Warning: If liquid in jar becomes cloudy at any point durning refrigeration do not eat the contains.
