We recently got introduced to a new dish called Colcannon. It is a traditional Irish dish that is served on Halloween. On Halloween it is served with trinkets inside that are said to tell your fortune. This dish is also served on days that are not holidays it just wont have all the fun trinkets in it. We liked it so much that I had to learn how to make it. I added the onion powder for some extra flavour but you can take out for a more authentic flavour.
Ingredients
- 1 ½ Pounds Russet Potatoes Peeled And Chopped
- 6 Ounces Curly Kale Diced
- ½ Cup Green Onion Diced
- 2 Tablespoons Salted Butter
- ¼ Teaspoon Garlic Powder
- ½ Cup Cooking Cream
Instructions
Step 1.
In a large pot bring potatoes to a boil for 20 minutes or until tender.
Step 2.
In a second pot bring water to a boil and blanch kale for 2 minutes. Discard hot water and place in cold water until potatoes are done.
Step 3.
After 20 minutes drain water from potatoes and mash potatoes with the butter and cream.
Step 4.
Add in garlic and (optional salt and pepper to taste).
Step 5.
Add the kale, and diced green onions to the mash potatoes and well combined.
