Whole Wheat New York Style Bagels Recipe

Ingredients

  • 2 teaspoons active dry yeast
  • 4 ½ teaspoons granulated sugar
  • 1 ¼ cups warm water
  • 1 cup all purpose
  • 2 ½ cups whole wheat flour
  • 1 ½ teaspoons salt
  • 1 egg for washing

Proof four hour before shaking and boiling in water

Instructions

  1. Place all dry ingredients in stand mixer and mix until well combined.
  2. Pour in warm water and mix until a dough starts to form. After dough is formed mixed on low speed for 10 minutes.
  3. Once dough is soft and elastic remove dough hook and lightly rub oil on top of dough while forming it into a ball. Cover dough with warm moist towel or plastic wrap and let rise for 1 hour.
  4. After 1 hour punch the dough down, cover, and let it proof for another 4 hours.
  5. Carefully divide the dough into 8 round pieces. Lightly fold each piece into a round ball.
  6. Now for the bagel magic trick. Press your thumb into the center if the dough ball to form a hole and stick your other thumb in the opposite direction as your other theme into the holes and roll the dough around your thumbs to make a larger hole. (It’s like twiddling your thumbs but this time with dough on them.)
  7. After the magic placing them on the cookie sheet lined with parchment paper cover with a damp kitchen towel or plastic wrap and allow to rest for 10 minutes. Meanwhile, preheat your oven to 425ºF-220ºC and bring water to a boil.
  8. After 10 minutes place bagels in boiling water and boil for 1 minute then flip them over and boil for 1 minute.
  9. Whisk one egg until the white and the yellow are completely mixed together and brush the tops of each bagel with egg wash.
  10. Place your bagels in the oven for 20 – 25 minutes, or until golden brown and enjoy. Well you should let them rest until slightly warm but who would we be kidding hot bagels are amazing!
