Ham and hominy soup is a southern and midwestern dish made of hominy and whatever ham or pork people have in their homes. Common pork used for ham and hominy soup is ham, hammocks, pork belly, and pork shoulder. Some families have a tradition of using left over holiday ham to make hominy soup, and some people eat it with corn bread or tortillas. However you decide to dig into this dish is it full of flavor and delicious.
Ingredients
5 Ham Slices (Sliced thick and cubed)
1 Green Onion (or 1 Medium Brown Onion diced )
1 15oz Can White Hominy (Drained and rinsed)
1 Quart Chicken Broth
1 Teaspoon Onion Powder
1/4 teaspoon Garlic Powder
1/8 teaspoon Black Pepper Powder
2 Tablespoons Olive Oil
Salt to taste
Instructions
Step 1 – In a medium soup pot on medium heat add 2 tablespoons spoons of olive oil. Add in the cubed ham and fry it until it is golden brown. (If you are using brown onions chop them and add them in on this step and cook them with the ham.)
Step 2 – Add in 1/2 cup of chicken stock to the pot to dissolve the dripping on the bottom of the pan.
Step 3 – Once the drippings have dissolved into the stock as much as they can add in the rest of the chicken stock, the hominy, and the spices. Bring soup to a boil and then lower it to a simmer for 10 to minutes.
Step 4 – Once the soup is done turn off the heat, chop the green and add them to the soup. Serve hot or warm and enjoy.
